Food Service at Squaw Valley Academy

There is a strong link between healthy eating habits and high-quality student performance. Good nutrition is an important part of the Squaw Valley Academy lifestyle. Just as Squaw Valley Academy has established educational standards, we have also set high standards for food service.

At SVA, we realize that most teenagers like eating foods that are typically not healthy - pizza, hamburgers, french fries, etc. We make these meals using more healthy ingredients, such as Italian-style pizzas with fresh vegetables and lean meats.

As the kitchen is usually the center of family activities, the dining hall at SVA is also the center of campus for student socializing. Students at SVA comment that the dining hall helps them feel "more at home."

We prepare and serve meals that meet and exceed the national school nutritional requirements, with many of the meals made from scratch.

From the homemade daily soups to the hand-rolled grilled chicken burritos, the students and staff agree on the high quality and exceptional taste. Fresh salad bars are available each day, and the dining hall supplies fresh fruits, homemade soup, and fried rice for snacking between meals.

Our goal is to provide students with healthy nutritious meals to foster healthy eating habits to last throughout their lives. We also offer a vegetarian option at most meals and can accommodate some special dietary needs.

A DAY IN THE SVA DINING HALL

7:15-7:55 Breakfast: Every day, we offer whole and sliced fresh seasonal fruits (i.e. apples, berries, mango, and melons); option of three cereals, scrambled eggs, and a toaster station that includes nine-grain bread, bagels, English muffins, biscuits, and croissants with peanut butter, jelly, and real butter. Hot side items include Texas-style French toast, chicken-apple sausage, and oven-roasted home fries. Fresh squeezed orange juice blends, made from local fruits, are prepared daily. Daily varieties of juice blends may include peach, orange, pineapple, carrot, blackberry, and other seasonal fruits. Two percent milk is also offered daily.

10:00-10:30 Snacks: Homemade soups and the salad bar are available to students. Soup selections include butternut squash, chicken and wild rice with fresh vegetables, and potato leek chowder. The salad bar offers fresh raw vegetables: cucumbers, tomatoes, red onions, spinach, varied lettuces, kidney beans, chick peas, hard boiled eggs, sesame seeds, cottage cheese, potato salad, tuna salad, croutons, shredded cheese, pasta salad and at least three types of dressing: peppercorn ranch, oil and vinegar, bleu cheese.

12:30-1:00 Lunch: Hot entrees may include grilled eye-of-round corned beef with Swiss or American cheese and sweet mustard on grilled French bread, soft chicken tacos, meatball hoagie, chicken Caesar salad wraps on whole-wheat tortillas, or barbequed ham sandwich with pasta salad. Soup and salad bar are side items offered with lunch and dinner.

5:15-5:45 Dinner Hot dinner meals may include oven-roasted chicken with made-from-scratch mashed potatoes and chicken gravy; lean roast beef tri-tip with green beans, corn, and garlic butter pasta; or beef enchiladas, grilled squash, and wild rice. Soup and salad bar are side items with lunch and dinner.
